Oatmeal Crisps

We absolutely love these oatmeal cookies. They are crispy and chewy. Everything a good  cookie should be.



Ingredients
1 cup butter, softened
1/2 cup packed brown sugar
1 cup white sugar
1 egg
3/4 cup flaked coconut
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 1/2 cups rolled oats

Directions
Preheat oven to 350 degrees F (175 degrees C).
In a medium bowl, cream together butter, brown sugar, and white sugar. Mix in the egg. Add the coconut and mix. Combine flour, baking powder and baking soda; blend into creamed mixture. Stir in the rolled oats by hand. Drop dough by rounded tablespoons onto un-greased cookie sheets. Bake for 10 to 12 minutes in preheated oven, or until lightly browned. Cool on wire racks.

Cream butter in a large mixing bowl

Add white and brown sugar

Mix in egg and coconut and continue to mix

Add flour, baking powder and baking soda
By hand mix in the large oats

Mix until well incorporated

Drop dough by rounded tablespoons onto ungreased cookie sheets (you can also use a small ice scoop)
Bake for 10 minutes in a 350 degree oven
