Scalloped Potatoes



As a kid I remember my Mom making scalloped potatoes but not quite the same way. She would layer the sliced potatoes and then sprinkle with flour and then pour milk over top. Not exactly creamy and smooth!!! More often then not the scalloped potatoes were either too dry or too watery and sometimes the flour was still visible. Although quick and simple, definitely not tasty!! This recipe uses a simple white sauce that guarantees creamy smooth scalloped potatoes every time.

Ingredients:

31/2 to 4 pounds potatoes (I used mixed baby potatoes)
1 large onion, chopped
8 Tablespoons butter
8 Tablespoons flour
Kosher salt
Freshly ground pepper
4 Cups milk

In a medium saucepan melt butter. Stir in flour, salt and pepper to taste. Cook for a minute, stirring constantly.
Add milk. Whisk mixture constantly. Bring to a boil and then remove from heat. Set aside.
If using large potatoes, peel. Not necessary to peel baby potatoes.Thinly slice potatoes.Chop the onion.

In a 9x13 inch pan. Layer half of the potatoes and sprinkle onions over top. Salt and pepper potatoes.Pour half of the white sauce over the potatoes. Layer the rest of the potatoes on top of the sauce, followed by the onions. Pepper to taste. Pour the rest of the sauce over top of the potatoes. Pepper to taste.

Cover with tin foil. Bake in 350 degree oven for approximately one hour or until potatoes are tender. Remove foil during the last 15 minutes of baking to brown the potatoes. To avoid spills in your oven, place the baking dish on a foiled lined pan while baking.

Melt butter in saucepan.

If you have new potatoes no need to peel, other wise peel your potatoes
Thinly slice potatoes and place 1/2 in a 9x13 dish

Chop the onion and sprinkle 1/2 over potato layer.
 Salt and pepper potatoes and pour half of the white sauce over the potatoes. Layer the rest of the potatoes on top of the sauce, followed by the onions. Pepper to taste. Pour the rest of the sauce over top of the potatoes. Pepper to taste.

Repeat with another layer of potatoes and onions and more pepper to taste.

 Pour the rest of the sauce over top of the potatoes. Pepper to taste. Cover with tin foil. Bake in 350 degree oven for approximately one hour or until potatoes are tender.
Remove foil during the last 15 minutes of baking to brown the potatoes.
