Sinful Cinnamon Buns

We love these cinnamon buns!!! Not only are they super easy to make but they are soooooo good.! This recipe makes a big batch but share them with your friends, family and co-workers, you will be forever loved!! The recipe originates from the Pioneer Woman but we have made a some changes to the original recipe to suit our tastes. What is nice about this dough is that you can make it and store it in your refrigerator for up to three days and then make the buns fresh the day you need them. I use disposable aluminum baking pans and then I can give them away or take them to work and not have to worry about getting my pans back.


Dough Ingredients:

1 Litre milk
1 cup vegetable oil
1 Cup sugar
41/2 teaspoons active dry yeast or two packages
9 Cups all-purpose flour
1 teaspoon baking powder

1 teaspoon baking soda
1 Tablespoon salt

Filling Ingredients:

1 1/2 Cups melted butter
¼ Cup cinnamon or to taste
4 Cups brown sugar
1-2 Cups chopped pecans or walnuts (optional)
Icing Ingredients:

4 Cups powdered icing sugar
⅓ Cup milk
3 Tablespoons melted butter

Directions:

Dough:Heat milk, vegetable oil, and sugar in a medium saucepan over medium heat or microwave but do not allow mixture to boil, set aside to cool to lukewarm. Pour mixture into a large bowl. Then sprinkle yeast over top of the milk mixture for approximately 3 minutes. Add 8 Cups of flour to the milk mixture and stir until just combined.Cover with a kitchen towel and place in a nice warm place for about one hour.
After dough has rested for an hour, add baking powder, baking soda, salt and the remaining 1 Cup flour. Stir into dough to combine.
At this point you can make the buns right away or cover the bowl with plastic wrap and refrigerate for up to 3 days, remembering to punch the dough down if the dough rises to the top of bowl.
Assemble Cinnamon Buns: Take the dough and divide in half. Place the other half back in bowl and cover so it doesn’t dry out. On a floured surface, roll the dough out to a large rectangle, approximately 30x10 inches. Pour about ½ Cup of the melted butter over the surface of the dough and spread all over. Sprinkle the brown sugar all over the dough, followed by the cinnamon. You can add as much or as little of the filling ingredients as you like. In my opinion more is better, if I was concerned about calories I wouldn’t be making these buns!!! I don’t believe in “light cinnamon buns”, what would be the point of that??? Back to the buns.
If you like nuts add nuts, if you like raisins add them too or don’t.
Start rolling the rectangle. Work slowly and try to keep the roll nice and tight. Pinch the seam together when the roll is complete.
Pour 1-2 tablespoons of melted butter into desired pans ( I use disposable aluminum pans) and swirl to coat the pan. With a sharp serrated knife slice into buns. Each log will make approximately 20-24 buns depending on how big or little you slice them. Place buns into pans, remembering to not over-crowd as buns need room to rise. Repeat for the remaining dough..
Cover buns with kitchen towels and let rise on the countertop for approximately 30-60 minutes.

Preheat oven to 375 degrees.
Remove the towel and bake buns for approximately 13-17 minutes, until nice and golden brown.
Icing:
In a large bowl, whisk together the icing sugar, melted butter and milk until smooth. The icing should be thick but thin enough to drizzle over the buns.
When the buns come out of the oven drizzle the icing over top.

Combine milk,oil,sugar in a microwave safe bowl or heat mixture in a saucepan. Do not bring to a boil. Set aside to cool to lukewarm.

Once mixture is lukewarm, sprinkle yeast over milk and let sit for 3 minutes.

In a large bowl add 8 cups of flour.

Add the milk mixture to the flour.

Stir to combine.

Cover with a towel and set aside for one hour.

Remove towel

Add remaining 1 cup of flour, baking powder, and salt. Knead into flour.

Add a little melted butter into each of the pans, and swirl to coat.

Divide dough in half.

Roll to a 30x10 inch rectangle.

Spread butter over dough, then brown sugar, then cinnamon, nuts or raisins.
Chop nuts. This is one of my favorite tools!!


roll into a log and pinch seams.

Slice into buns.
  
Place onto prepared baking sheets.

Cover with tea towels to let rise 30-60 minutes.

Make icing while buns are baking.


Drizzle icing over warm buns.
