FRUIT COCKTAIL CAKE




This is such a delicious cake, you will not be disappointed !! Every bite is a delight. Quick and easy to prepare. The first time I made it I was a little hesitant because of the fruit cocktail but do not hesitate, trust me, make it now!! You will not regret this decision. Serve with vanilla ice cream or whipping cream or simply serve it alone. 


Ingredients:

2 eggs
1 1/2 Cups sugar
¼ tsp. salt
2 tsp baking soda
14oz or 398ml can of Fruit Cocktail with juice
2 Cups of flour


Sauce:

¾ Cup sugar
½ Cup milk
½ Cup butter
1 tsp. rum or vanilla

Instructions:

Cake:
Beat eggs, add the rest of the ingredient, except flour and mix well. Add flour and mix. Pour into a greased 9x13 inch pan. Bake @ 350 degrees for approximately 30 minutes or insert a toothpick into centre of cake, if it is clean the cake is done.
Sauce:
While the cake is cooking make the sauce so that it is ready to pour over it as soon as the cake comes out of the oven.
In a medium saucepan heat sugar,butter and milk. Bring to a boil. Remove from heat. Add rum or vanilla. Pour this mixture over the hot cake ( all of it ). The cake is like a sponge and it will absorb all the syrupy goodness.
Serve warm. Also yummy with vanilla ice cream or whipped cream.

Beat eggs. Add the remaining cake ingredients except the flour.

Add flour

Mix and pour into 9x13 greased pan.

While cake is baking make sauce. Combine butter ,milk and sugar.

Bring to boil. Remove from heat and add rum or vanilla.

Remove fully cooked cake from oven.

Pour hot Fruit Cocktail Cakesauce over hot cake.


The cake is like a sponge soaking in all that yummy goodness.


Serve warm out of the oven.

  1. This was the most delicious, easiest and cheapest cake to make! My family raved about it! I had so much tropical fruit cocktail from institutional/Costco-size cans to use up. I chopped the large fruit into smaller pieces. A friend had made a similar cake years ago, but this far surpassed hers. I will try this in a bundt pan next time for a "prettier" version to serve.
