Mozzarella Penne

This recipe is perfect week night meal. It makes a really large amount so perfect for a make-ahead meal as well. Serve with Caesar salad and garlic toast.


Ingredients:
2 tbsp olive oil
1 onion chopped
½ green pepper chopped
2 tsp. fresh garlic
1 454 gram package of Italian sausage (mild or spicy)
2 jars (500ml - 650ml) pasta sauce (any flavor or brand)
1 tbsp. oregano
2 tsp. basil
½ tsp. salt
pinch of red pepper flakes
1 lb (454 grams) penne pasta
3 tbsp. butter
3 tbsp.flour
2¼ cups milk
3-4 cups grated mozzarella cheese
1 cup Parmesan cheese

Instructions:
In a large skillet heat your oil. Remove sausage casings. Add onion and garlic, stir, add green pepper and sausage, breaking up well. Add pasta sauce and spices, let simmer.

Fill a pot with water and set on high heat. Once boiling, add salt and pasta. Cook el dante.

To make Bechamel; On med-low heat, melt butter in a saucepan. When melted, add your flour and stir until smooth. Whisk continually until mixture is light golden brown, about 2 min. Add your milk a little bit at a time, stirring constantly until its thick. Add a pinch of salt.

Using a 9"x 13" pan, layer a small amount of red sauce from step 1 to the bottom of your pan. The layering process is as follows.Pasta, red sauce, bechamel and mozzarella. Do this a total of 2-3 times. Sprinkle more mozzarella and Parmesan on top, to your liking. For us, the cheesier the better!!

Bake at 375 until golden and bubbly, about 20-30 minutes. Sprinkle with fresh chopped parsley or basil. Enjoy warm.
