Banana Nut Muffins


I have been making this muffin recipe for almost 25 years. The recipe comes from the Company's Coming Muffin recipe book.  My family never tires of these banana muffins, they are scrumptious and moist with a mellow banana flavour. Whenever I have over ripe bananas I make these muffins and with three teenagers I try to make a double batch or else they are gone in a flash. I often wrap them individually and hide them in the freezer for lunches and they still taste great.

PIZZA DOUGH (NO KNEAD)


One of our very best friends from British Columbia shared this recipe with us recently and honestly this is the best pizza dough we have ever made. This dough creates a pizza that is chewy, bubbly, and quite frankly better than what you'll get at most pizza places, plus easy to make. It bakes wonderfully in a home oven, on a pizza stone or a baking sheet. Thanks to the brilliant no-knead method of Jim Lahey—owner of New York's Sullivan Street Bakery and Pizza Spot Co.—it's easy to prepare, deriving its character from overnight fermentation, not laborious kneading. Just remember to start at least 1 day ahead. Then the dough can be stored in your fridge for up to three days or frozen for later use.  The secret to this recipe is having a really, really hot oven (550 F), and if you have a pizza stone, preheating it prior to cooking the pizza. Have friends and family over for a pizza party, add a salad and the meal is complete!!

Coconut Shrimp & Pina Colada Dip

We have served these crispy shrimp with the dip many times and they are always a hit! If you have ever ordered the "Parrot Bay Shrimp" at the Red Lobster Restaurant you will find these a very close copy cat, but better. They can be made ahead, frozen and then thawed and heated up. If you plan to make ahead try not to cook them as long as they will brown up during re-heating. Enjoy!!!!!

You may remember this delicious and sinful layered dessert that was popular back in the eighties and if you haven't ever had this dessert than you must try it!! It's a perfect make ahead and depending on your taste you can choose whatever pudding flavours or chocolate bars you like. This stuff is soooooooo gooooood!!! Perfect for potluck.

Slow Cooker BBQ Beef on a Bun

I absolutely love this recipe. It not only tastes great but it is very versatile. Great in the winter after a cold day or in the summer when the thought of turning the oven on is the last thing on your list. Wonderful for large group gatherings and easy enough for a week night meal. Leftovers freeze well. This recipe will become one of your favourites!!!

PESTO & MOZZA STUFFED TOMATOES


These are so simple, delicious and super cute. You can use any tomato but this recipe uses the campari tomato. They are the size of a golf ball. You  can usually find them at Costco.

ORANGE & DATE BLENDER MUFFINS

This is a yummy and simple muffin recipe. You mix the liquid ingredients in a blender and you actually add a whole orange!! Yes the peel and all!!  The fresh orange flavour combined with the sweet dates is irresistible. It is a fun recipe to make and even better to eat. Try it you won't be disappointed.
